Pink Butterfly French 75
This whimsical cocktail strikes a balance between bright citrus and gentle floral notes, with a splash of color from butterfly pea tea. Topped off with sparkling wine and a playful swirl of cotton candy, it’s perfect for celebrations or anytime you want to make a splash.
Although this cocktail is formulated to be made punch style - butterfly pea transforms with the addition of lemon juice. If you have a smaller party - consider adding the lemon juice in front of your guests so they can see the beautiful transformation.
Glass: Champagne flute (or coupe)
Garnish: Cotton candy and edible butterflies (optional but fun)
Ingredients:

Mix:
8 oz gin
4 oz fresh lemon juice
4 oz simple syrup
4-6 oz brewed butterfly pea tea
Note: This mimics dilution. If you’d like to use ice instead - use less water to brew the butterfly pea. If don’t have butterfly pea tea, substitute with hibiscus tea, cold still/sparkling water or ice when serving. There won’t be a color changing experience and less of a vibrant color but it will taste delicious all the same. The lemon and sparkling wine will turn the mixture from blue to purple.
1 bottle of sparkling rose, sparkling wine, or sparkling water
Makes: 8 servings
Instructions
Prepare the Base
In a pitcher or sealable container, combine the gin, simple syrup, and brewed butterfly pea tea.
Stir well to ensure everything is mixed.
Chill the mixture in the refrigerator until you’re ready to serve.
Serve Option A (By the Glass)
Fill each flute (or coupe) about halfway with the chilled base mix (gin and simple syrup)
Watch the color transform. Top with a squeeze of lemon ~3 oz of chilled sparkling wine or rosé per glass.
Lightly stir, then gently place a tuft of cotton candy on top, finishing with an edible butterfly garnish.
Serve Option B (Punch-Style)
In a punch bowl or large pitcher, gently stir the entire bottle of sparkling wine or rosé and lemon juice into the base mix just before serving.
Ladle or pour into individual glasses.
Top each glass with a fluff of cotton candy and an edible butterfly.
