Hibiscus Blueberry Thyme Mocktail

Enjoy a burst of floral and fruity flavor in this updated Hibiscus Blueberry Thyme Mocktail

Ingredients

  • ~24-32 oz chilled hibiscus tea

  • 8 oz blueberry preserve or jam (homemade or store-bought)

    Tip: If your preserve is quite sweet, you may want to reduce the simple syrup below.

  • 2–4 oz simple syrup (start low, then adjust to taste)

  • 4 oz fresh lemon juice (optional, but brightens the flavor)

  • 8–12 sprigs fresh thyme (reserve some for garnish)

  • 16–24 oz sparkling water or club soda (to taste)

  • Ice (for serving)

Serving Size: 8 servings

Optional: Make Your Own Quick Blueberry Preserve

  1. Combine 2 cups fresh or frozen blueberries, ¼ cup sugar (adjust to taste), and the juice of half a lemon in a small saucepan.

  2. Simmer over medium-low heat for about 10–15 minutes, stirring occasionally until the mixture thickens and becomes jammy.

  3. Let it cool, then use in place of the store-bought preserve.

Instructions

  1. Create the Base

    • In a large pitcher, whisk or stir together the hibiscus tea, blueberry preserve, and 2 oz of simple syrup.

    • Add the lemon juice (if using), then taste. Adjust sweetness with more simple syrup if needed.

  2. Add Thyme & Chill

    • Drop in 8 sprigs of fresh thyme to infuse.

    • Cover and refrigerate the mixture for at least 30 minutes (or up to a few hours) to let flavors meld.

  3. Serve Over Ice

    • Fill each serving glass with ice.

    • Fill the glass about ⅔ full with the chilled base.

  4. Top with Sparkle

    • Top each glass with 2–3 oz of sparkling water (or to taste).

    • Stir gently to combine.

  5. Garnish & Enjoy

    • Add a fresh thyme sprig to each glass, and serve immediately.

    • If desired, add a few fresh blueberries on top
