Puff Pastry Mini Apple Pies

It’s fall which means baking season! There’s something about fall that makes me crave warm, spiced desserts—especially pie. But sometimes, I’m not in the mood for a full-sized pie or the time it takes to make one. Enter these puff pastry apple bites: they’re single serving, perfectly portioned for a snack or dessert, and so easy that even the most beginner baker can make them.
With just a few ingredients and 15 minutes, you’ll have the perfect fall treat. These mini pies are everything I love about fall baking, but without the fuss.
Quick and Easy Puff Pastry Apple Pies
Serves 4
Ingredients:
1 sheet puff pastry, thawed
1 apple (any variety)
Brown sugar
Fig paste or your favorite jam
Cinnamon
Powdered Sugar
Instructions:
Preheat your oven to 400°F (200°C).
Use a cookie cutter or a glass to cut your puff pastry sheet into 4-inch rounds.
With a smaller cookie cutter or cup, gently score the center of each round, being careful not to cut all the way through.
Use a fork to press down the center of each round to create a slight indent. Use a knife to create the little leaf ontop.
Spread a teaspoon of fig paste (or your favorite jam) in the center of each puff pastry.
Thinly slice the apple and layer the slices over the fig paste in a slightly overlapping pattern, like pages in a book.
Generously sprinkle brown sugar over the apples.
Bake for 15-20 minutes, or until the puff pastry is golden brown and crisp.
Sprinkle cinnamon + powdered sugar ontop. Let cool for a few minutes, then enjoy while still warm!
