Lasagna Soup

Hello Cozy Dinner Club!! I absolutely love lasagna but hate waiting for it. Here's a cozy, comforting Lasagna Soup recipe that brings all the classic flavors of lasagna in a hearty, easy-to-eat soup form. Perfect for when you're craving lasagna but want something a little lighter and faster to make!



This recipe is packed with all the delicious layers of lasagna flavor, now in soup form! A touch of ricotta and Parmesan brings creaminess, while fresh basil and parsley add brightness. Here’s how to make it your own.

Ingredients

  • 1 package of ground meat (beef, turkey, or Italian sausage)

  • Salt and pepper, to taste

  • 3/4 jar marinara sauce (about 12 ounces)

  • 4 cups beef broth (recommend Kitchen Basics or Better Than Bouillon for a rich flavor)

  • 6–8 lasagna sheets, broken into pieces

  • 1/2 yellow onion, diced

  • 1/4 tsp red pepper flakes (adjust to taste)

  • 1 tsp Italian seasoning

  • Olive oil or butter, for browning

  • Fresh parsley, finely chopped, for garnish

  • Fresh basil, finely chopped, for garnish

  • Ricotta cheese, for serving

  • Parmesan cheese, grated, for serving

Instructions

  1. Brown the Meat
    In a large pot, add a drizzle of olive oil or a small knob of butter over medium-high heat. Add the ground meat and brown it, breaking it up with a spoon as it cooks. Add the diced onion and continue to cook until the onion is softened. Season with salt and pepper.

  2. Season the Soup
    Stir in the red pepper flakes and Italian seasoning, letting them bloom in the pot for about 1 minute.

  3. Add Marinara Sauce
    Pour in the marinara sauce, stirring to combine with the meat and onion mixture.

  4. Simmer with Broth
    Add the beef broth and bring the soup to a simmer. Taste and adjust seasoning if necessary.

  5. Cook the Lasagna Sheets
    Break the lasagna sheets into rough pieces and add them to the soup. Let the soup simmer for 8–10 minutes, or until the pasta is tender but not mushy.

  6. Finish with Fresh Herbs and Cheese
    Ladle the soup into bowls and top with a generous dollop of ricotta and a sprinkle of grated Parmesan. Garnish with finely chopped parsley and basil for a fresh, vibrant finish.
